Happy Monday!

Over the next few months, we’ll be sharing a cooking tip of the week with you supporting our recipe community in amazing special-diet cooking. Sometimes, a few tips and tricks are all you need to crush it in the kitchen!

Today we dare you to channel your inner Mirepoix and up your flavor game in the kitchen. Seriously, it’s the root of french cooking and it’s so simple to do at home. Combine the root veggies of onion, carrots and celery with a little fat, like coconut-oil or olive oil, and cook for a long time on gentle heat without changing color or browning. That gives you a Mirepoix  bringing depth to any dish.  And yes…you can make a big batch of Mirepoix, keep it in a mason jar in your fridge and add to your dishes for quick flavor boosts during busy weeks—think sauces, stir-fry, roasting veggies. A Mirepox is the perfect foundation to any soup or stew too….and you know we’re approaching that season of comfort foods.
