I am gluten free for health reasons, but my family is not. All the dinners I make are gluten-free because who’s bananas enough to make two dinners every night?! Not this girl. My blog is the culmination of what occupies my my mind, heart, and time. My family and food. I love to cook and spend hours in the kitchen, but being a mother, I have to balance the two. Who wouldn’t love to eat glorious, gourmet food all the time? But having kids does complicate things.

Method
  1. Preheat oven to 450F and grease a 24 cup mini muffin pan with cooking spray.
  2. Whisk together cornmeal, gluten-free flour, baking powder, salt, pepper and safflower.
  3. In a separate bowl whisk together eggs, milk, onion and butter. Stir wet ingredients into dry until combined.
  4. Scoop 1 tablespoon of batter into each muffin tin.
  5. Bake for 10 minutes or until the hushpuppies are golden and set.
  6. Mix together mayonnaise ingredients and serve as a dipping sauce with hushpuppies.
