Salmon
  1. Simply place washed salmon on lined baking pan (line with parchment paper or foil for easy clean-up).
  2. Evenly sprinkle and run with olive oil, sea salt and pumpkin pie spice. Bake in oven at 425F for 10-15 minutes or until the white fat shows up on the fish. Remove from oven when done. While fish is cooking, make the greens.
Power Greens
  1. In a large pot, place olive oil, onions and curry powder. Caramelize onions over medium heat. Next add greens to the pot. Cover for one minute then stir. Then add water and re-cover the greens. Allow to cook down for 5 minutes. Add sea salt to taste and serve.
Plate
  1. In a shallow bowl, ladle in greens and broth. Place a slice of baked salmon atop. Enjoy.
