Hello Parents—Back to School is hear! Are you jumping for joy like we are?  Part of back-to-school is getting everyone back on schedule. A great way to reduce hectic mornings is to pre-make breakfast. Consider making gluten-free Chia Banana-Nut Muffins on Sunday evening and you’ll have breakfast ready for your week.  These gluten-free, dairy-free and Paleo friendly muffins are delicious. Packed with fiber and protein they are perfect for a grab and go day. The use of  coconut flour creates a  super moist muffin with a beautiful texture and full flavor. Only sweetened with raw honey and banana to avoid a huge sugar spike. Method
  1. Preheat oven to 350 degrees
  2. Using electric mixer, combine eggs, melted coconut oil, almond milk and raw honey on low for 2 minutes.
  3. In separate bowl mush bananas into a paste with fork and add to mixer. Add vanilla extract, chia seeds, coconut flour, salt and baking soda to mixer and only mix on low till ingredients combine.
  4. Fold in pecans. Scoop batter into lined and greased muffin tins. Sprinkle toppings of bee pollen and sea salt. Bake for 25 minutes or until muffins are cooked through. Remove from tins and cool on rack. Enjoy!

Note: To make these nut-free simply do not add nuts and exchange coconut milk for almond milk.
