Our in-house Chicken Cacciatore atop Cauliflower Rice recipe is an Italian inspired dish full of robust savory flavors—tomato, oregano, peppers, chicken and white wine—served over a bed of Cauliflower Rice. Method
Chicken Cacciatore
  1. Chop chicken breast into 1/4 inch strips and set aside in a medium bowl. Toss in a pinch of pepper.
  2. Remove seeds and slice peppers. Set aside.
  3. In a large heavy pan heat the oil over a medium-high heat. Add chopped garlic, chopped onion and olive oil into pan caramelizing them til golden brown—stir often.
  4. Add chicken pieces to the pan and saute just until brown, about 5 minutes per side of even coking—stir even few minutes for even cooking..
  5. Add sliced peppers tomatoes, oregano leaves and a pinch of sea salt and a dash of pepper to the pan. Stir till combined. Cook for 2 minutes.
  6. Add wine/juice and a tbsp of agave. Place a cover over your pan, reducing heat to simmer. Cook for 5-10 minutes till veggies are soft and chicken is fully cooked.
  7. Serve solo or over cauliflower rice. Please see recipe below.
Cauliflower Rice
  1. Pre-Heat oven to 450F
  2. Wash cauliflower and cut it into large pieces.
  3. Transfer cauliflower to food processor: (only fill food processor 3/4 the way full—you will need to complete two rounds of processing for this recipe).
  4. Pulse cauliflower until completely broken down to rice size pieces.
  5. Warm a tablespoon of olive oil or butter in a large skillet over medium heat. Spread raw cauliflower rice onto a parchment paper lined baking sheet evenly about 1/4 inch thick.
  6. Drizzle olive oil on top and bake 450 for 10-15 minutes till golden brown. Stir occasionally. You know it's done when cauliflower is tender. Add sea salt and pepper if needed. Serve and enjoy!
