Method
  1. In large soup pot, heat olive oil on medium high heat. Add diced onion and leek. Stir till onion is translucent. Then add potatoes. Pour enough water into the pot so all ingredients are covered (about 32 oz). Bring to a boil. Reduce heat and simmer for 20 minuets of until potatoes are tender. Then use immersion blender to puree all ingredients. Add sea salt and pepper to taste. Serve and enjoy.
