Method
  1. Put all ingredients in a blender—except vanilla bean. Blend till and evenly mix together.
  2. Cut vanilla bean in half lengthwise, and scrape the inner vanilla into your blended batter. Blend by pulsing 3-4 times till combined.
  3. Spray frying pan with cooking spray. Heat your frying pan to a medium low flame.
  4. Pour about 2 tablespoons batter from the tip of a large spoon or from a pitcher onto your greased frying pan (a hot griddle works well too).
  5. Cook for about two minutes or until the pancake is golden. You should see the pancake edges look dull, then flip the cake gently.
  6. Cook other side until golden. Remove & enjoy!
  7. Serve with pure maple syrup or eat them plain with a side of banana!
