Method
  1. Preheat oven to 350 degrees F. Line a baking sheet with parchment.
  2. Whisk together your dry ingredients in a large mixing bowl. Add in wet ingredients using electric mixer. Mix till all ingredients are evenly combined. This dough gets stiff. It should stick together.
  3. On cookie sheet covered in parchment paper, scoop out cookie dough in a heap. Use your hands to mold into a roll stretching the length (or close to it) of your pan. Note: The width of your dough will be the length of your cookie). Then flatten your roll a bit keeping it about an inch thick.
  4. Bake the dough for 20 to 25 minutes. Let rest for 5 minutes.
  5. Cut log into half inch slices at a diagonal angle. Lay cut side down on cookie sheet and put back in the oven. Reduce heat to 300 degrees and bake for another 10 minutes.
  6. Flip cookies over and cook another 5-10 minutes. They should be dry in the center—perfect for dunking!
  7. Serve with Orange Spice Tea or coffee of your choice!
