Today, the fog rolled in and we could smell the ocean 8 miles from sea and 1300 feet above sea level—that sweet, salty aroma is soooo good. It was quite the treat to feel a slight chill in the air  after such a hot, dry, close to summer.  The change in weather, caused me to crave one of our famous soul warming soups—Gluten-Free and Dairy Free Fish Chowder.

Now it’s your turn to cozy-up with this delicious Gluten-Free & Dairy-Free Fish Chowder! Simple, healthy and delicious! Some call this recipe  “comfort in a cup”. This soup is easy, yummy and made in less then 30 minutes! A perfect  simple, healthy and delicious weeknight family meal!

Method
  1. Place Dover Sole fillets on oiled cookie sheet, squeeze lemon juice atop and broil in oven at 450F for 5 minutes.
  2. While fish is broiling, in medium pot, heat 3 tbsp olive oil, diced onions and potatoes. Sauté till onions are translucent.
  3. Add capers, liquid smoke, sea salt and almond milk. Bring soup to a boil then reduce heat and simmer for 5 minutes.
  4. Place 3 fillets of fish into soup. Using an immersion blender, puree soup.
  5. Then chop the remaining 2 fish filets and place into soup and parsley.
  6. Gently stir soup, add sea salt and cracked pepper to taste.
  7. Serve, garnish with a sprinkle of parsley. and enjoy.
