Method
  1. Pre-heat oven to 350F
  2. Using an electronic mixer, beat soft butter with Tahini and brown sugar in large bowl. Then add eggs, vanilla and apple sauce. Beat on medium speed for 2 minutes till well combined.
  3. In a separate bowl combine dry ingredients (except Pistachio nuts).
  4. Next, gradually add dry ingredients to the wet ingredients. Mix till just well combined. Do not over mix.
  5. Then fold in 3/4 cup of chopped Pistachio nuts (reserving 1/4 Pistachio nuts for topping muffins).
  6. Line or oil muffin tins and scoop 1/4 cup of batter into each muffin ressivor. Bake for 18- 20 minutes at 350F or until done.
  7. Let cool and enjoy.
