Hi, I’m Melissa, maker of this Kickin’ Chocolate Elderberry Bread. As part of The Marinate Blogger Recipe Challenge I had to create a recipe using Coffee Beans, Peppercorns & Norm’s Farms Elderberry Jam. I am gluten free for health reasons, but my family is not. All the dinners I make are gluten-free because who’s bananas enough to make two dinners every night?! Not this girl.

My blog is the culmination of what occupies my my mind, heart, and time. My family and food. I love to cook and spend hours in the kitchen, but being a mother, I have to balance the two. Who wouldn’t love to eat glorious, gourmet food all the time? But having kids does complicate things.

Method
  1. Preheat oven to 350 F and grease 9X5” loaf pan.
  2. Cream butter and sugar together in large mixing bowl until light and fluffy. Add eggs and vanilla and beat well.
  3. In a separate bowl whisk together flour, cocoa, finely ground coffee, finely ground peppercorns (I used a coffee mill), baking powder, baking soda, and salt.
  4. Add to butter mixture and stir well. Pour into greased pan.
  5. Drop dollops of jam all over top of bread and swirl slightly with a knife.
  6. Bake for 60-65 minutes until toothpick inserted in center comes out clean. Cool in pan for 10 minutes and then turn onto wire rack to cool completely.
