Method
  1. Preheat your oven to degress 180 Celsius, 350 degrees Fahrenheit.
  2. With olive oil grease your muffin tray really well. I like to use a silicone muffin tray as I find the baked goods come out easier.
  3. In a bowl mix together all of the dry ingredients. Add the beaten egg and almond milk and whisk thoroughly so that the batter is smooth.
  4. Stir in the chives and sun dried tomatoes then pour your batter into the well greased muffin tray to just above half way.
  5. Place a cube of feta into the centre of each muffin making sure it is covered by the batter. Put into your oven and bake for 25 to 30 minutes until firm and golden, or until a toothpick is inserted and comes out clean.
