This  gluten-free and dairy-free Pumpkin Ginger Cardamom Soufflé recipe is simply amazing. A deliciously fluffy seasonal soufflé perfectly served with a side salad. Lightly sweet with a smooth texture.

Method
  1. Pre-heat oven 375 degrees.
  2. Oil three 12 oz ramekins (or you can always do smaller ones—8-12 small ramekins)—set aside.
  3. In saucepan bring coconut milk to a boil over medium heat.
  4. Remove from heat and add ginger and cardamom pods.
  5. Cover and let steep for 15 minutes.
  6. In the meantime, whisk egg yolks and sugar together in large bowl till sugar dissolves.
  7. Add flour and whisk together.
  8. Now that 15 minutes have past, ladle out the ginger and cardamom pods from your hot milk.
  9. Slowly whisk in the hot milk mixture to the sugar, egg white and flour bowl, till evenly combined.
  10. Now transfer yolk/milk mixture back to the saucepan you used to boil coconut milk.
  11. Over medium heat, cook and constantly whisk making a smooth custard (should only take 3 minutes max).
  12. Transfer to a large bowl, mix in pumpkin and set aside.
  13. Now it’s time for egg whites! In a mixing bowl whisk until opaque and frothy—by hand or use and electric mixer.
  14. Add 6 tbsp sugar and beat till stiff and wet.
  15. Gently fold egg whites into pumpkin mixture till evenly combined.
  16. Spoon batter into ramekins. Place ramekins into a large baking pan.
  17. Add water to your baking dish so each ramekin is surrounded by ½ inch of water.
  18. Place baking dish filled with ramekins in oven on middle shelf. Bake till soufflés have risen nicely above the rim and are golden brown (give yourself 20-30 minutes).
  19. Serve immediately & enjoy.
