Method
  1. Sauté garlic, onion and ginger until the onion is soft then add spices and capsicum/red pepper. Cook until fragrant.
  2. Add the coconut milk and bring to a simmer.
  3. Add everything else except the peanut butter or almond butter and cover. Cook for 35 minutes or until pumpkin is cooked through. Add your peanut butter and cook for another 10 minutes.
  4. Use a hand blender to blend to a smooth soup.
  5. Garnish: with cashews, peanuts, fresh coriander, sliced chilli, sesame seeds, sesame oil, Greek yogurt, chilli flakes etc.
