Method
  1. In a large mixing bowl combine all ingredients— almond flour, maple syrup, vanilla extract, pumpkin pie spice, salt, and the zest from one orange—using a fork mix till an even dough forms.
  2. Line a 6-inch baking pan with parchment paper, sprinkle 1/2 cup slivered almonds and 1 tbsp orange zest evenly onto parchment paper and press dough firmly into cake pan. Press remaining almonds onto the cake top. Refrigerate one hour for dough to firm up.
  3. Remove from refrigerator and place your serving platter/cake plate up-side-down on top of the cake pan. Holding the plate atop the cake pan, flip it up-side-down so your cake pan sits atop your cake plate. Your cake should end-up right-side-up on your cake plate. Remove parchment paper and you have your beautiful cake!
  4. If you are not serving right away, cover cake and store in refrigerator for up to 2 weeks.
