Hi, I’m Melissa, maker of this Roasted Seasoned Lima Beans recipe! I am gluten free for health reasons, but my family is not. All the dinners I make are gluten-free because who’s bananas enough to make two dinners every night?! Not this girl.

My blog is the culmination of what occupies my my mind, heart, and time. My family and food. I love to cook and spend hours in the kitchen, but being a mother, I have to balance the two. Who wouldn’t love to eat glorious, gourmet food all the time? But having kids does complicate things.

Method
  1. Place beans in a medium saucepan and cover generously with water. Bring to a boil over high heat and then reduce heat to low, cover, and cook until beans are just soft, about 1 hour. Remove from heat, drain, and cool under running water. Spread on dish towel or paper towels to dry.
  2. Preheat oven to 425 F. In a bowl mix together beans and all remaining ingredients. Drizzle a little more olive oil on baking sheet and spread beans out onto it. Roast for about 25 minutes until they are golden and roasted, tossing halfway through. Cool completely and store in airtight container.
