Method
  1. Season meat with sea salt and pepper. Scatter the onion, pear and pear juice on the bottom of a roasting pan. Set the meat breast-side up in the pan and sprinkle fresh sage atop.
  2. Roast for 2 hours or until a thermometer inserted into the thickest part of the roast registers 160 degrees F.
  3. Transfer the turkey to a cutting board. Gently wrap with foil and rest for 30 minutes.
  4. Slice and serve using pan dripping and cooked onion and pear sliced to top when plating.
