Method
  1. Preheat the oven to 350ºF.
  2. Line a baking sheet with environmentally friendly parchment paper. Melt butter and add in safflower petals. Allow the flowers to sit in butter for 2 minutes.
  3. Add melted butter to an electric mixer and start the mixer on a low speed. Add in mixer the eggs, lime zest, lime juice and vanilla. Mix till these ingredients are fluffy (approximately 2-4 minutes). Keep the mixer going on low while you follow the next steps.
  4. Add sea salt and baking soda to the mixer. Then gradually add organic corn meal and gluten-free baking flour blend while the mixer is still running. Mix till the flours are just mixed in and evenly combined. Now, stop the mixer.
  5. Place parchment paper on the counter top and sprinkle with GF flour. Place Biscotti Dough on the floured parchment. Add remaining cup of GF flour to dough while gradually kneading till smooth. Your final dough should not be sticky,
  6. Divide the dough in two equal portions. Using your hands, form each portion into a 10-inch long roll / log and transfer them to the parchment paper lined baking sheet.   7. Bake Biscotti rolls for 20 minutes at 350F degrees.
  8. Using a sharp bread knife, slice the logs crosswise into individual cookies— each about 1 inch. Place the biscotti back on the baking sheet, cut side down and bake for 20 more minutes. Remove biscotti from oven and flip each cookie over. Cook for 10 more minutes. Your cookies should be golden in color.
