Method
  1. In a medium saucepan combine quinoa and water. Bring to a boil.
  2. Then reduce heat and simmer for 15 minutes or until liquid is nearly absorbed. Set aside and let cool.
  3. Time to chop the veggies. Using a knife or food processor, chop peppers and onion.
  4. Place veggies, onion, raisins and cooked quinoa in large salad bowl. Set aside.
  5. In a small bowl, combine olive oil, balsamic vinegar, maple syrup, and mustard. Whisk till creamy.
  6. Drizzle dressing over top of quinoa salad. Toss till evenly dispersed. Add sea salt and cracked pepper to taste.
  7. Chill and serve. Enjoy!
