Are you still finding ways to use leftover turkey from Thanksgiving 2016? Well…think breakfast—the most important meal of the day! We’ve got an idea. Go nutty for these Turkey & Paleo Waffles using Thanksgiving leftovers and our famous Gluten-Free Paleo Waffle recipe!  The nutty sweet waffle pairs perfectly with savory or smokey turkey and gravy.  No need to drizzle syrup on top, cause it’s already in the Paleo waffle recipe itself! Perfect for company and family gatherings. Or maybe all guests are gone and it’s just you by now? This recipe is worth making. Remember to shred your leftover turkey and serve atop waffles with a side of gravy.

There is something really special about these Paleo waffles. The base is simple and made out of Hazelnut flour. If you can’t find the hazelnut flour at your local grocer, feel free to make it yourself. Simply remove shell of hazelnut (or buy them already de-shelled), then grind them in a food processor using the pulse button till they are as fine as flour. Bing-battah-boom! You’ve got your own hazelnut flour.

Method
  1. Whip eggs until pale.
  2. Heat syrup in a sauce pan until it boils.
  3. Slowly pour the syrup into the eggs while beating an additional minute.
  4. Mix in salt, vanilla and oil.
  5. Gently combine flour to the liquid mixture. Pour mixture onto waffle iron and cook until both sides are brown.
  6. If you double the recipe, you can freeze these waffles and reheat them in the toaster at a later date.
  7. We generally serve the waffles with a little non-dairy butter. These bad boys have syrup in them, so they don’t need to be topped…but indulge if you wish:-) Enjoy!
