This Ultimate Carrot Soufflé recipe was shared with us from friends in North Carolina—shout out to Barry & Jody! We adapted the recipe a bit and it is one of our favorite fall dishes! It’s sweet with amazing texture—a perfect pair to savory main courses. Think Thanksgiving—ooo…la…la—move over sweet potatoes and hello Carrot Soufflé! It’s gluten free, dairy free, nut free bliss—and it fits into a Paleo lifestyle as well!  This is the perfect holiday side-dish.

Method
  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Bring a large pot of salted water to a boil.
  3. Add carrots and cook until tender, about 15 minutes. Drain and mash.
  4. Add melted coconut oil, eggs, sugar/maple syrup , gluten-free flour, baking powder, vanilla extract and eggs to the mashed carrots. Mix well and transfer to a 2 quart oiled casserole dish. Note: Line dish with parchment paper for easy release and clean-up.
  5. Bake in preheated oven for 45 minutes.
  6. Serve and enjoy!
