Method
  1. In a standing mixer fitted with a whisk, mix together sugar and coconut oil. Mix on low speed until well blended. Increase speed to medium and beat for another 2 minutes.
  2. Add vanilla and coconut milk. Continue to beat till smooth spreadable consistency.
  3. Pop some popcorn over the stove or buy some popped kettle corn. If you make your own, once popped drizzle melted coconut oil and sprinkle sugar, sea salt and cinnamon to taste.
  4. Spread frosting atop cupcakes. Then pile on popcorn and lightly press into the frosting. Set cupcakes into your fridge to help set the frosting for 5 minutes and serve.
