It pairs well with sautéed greens and garlic mashed cauliflower.  Cod is a mild flavored fish, flaky, easy to cook, high in omegas and protein—a healthy gluten-free, Paleo friendly, dairy–free recipe ready in minutes.  Coconut Lime Cod

Serves 2-4 people

Prep Time: 5 minutes

Cook Time: 7 minutes


2 fillets of wild caught cod (1-2 lbs)

2 tbsp raw coconut oil

1 lime (organic as you will use the whole lime—juice and rind)

1- 2 cup(s) dried shredded coconut

Sea salt & pepper to taste



Line a baking pan with parchment paper.

Zest your lime into a small bowl then cut the lime in quarters—set aside. Place 1/4 tbsp raw coconut oil under each cod fillet on parchment paper lined baking pan. Evenly place 1/4 tbsp raw coconut oil atop each cod fillet. Squeeze lime juice atop cod filets and generously sprinkle shredded coconut.

Broil fish until just cooked through, depending on thickness, 6 inches from the heat, between 4 and 8 minutes. The coconut should be toasted and fish cooked through.

Plate fish. Evenly sprinkle lime zest, sea salt, and fresh ground pepper atop. Serve with sautéed greens and garlic mashed cauliflower.
