Your Right to Know What You Eat :: Frightful GMOs. Halloween can be a frightful time all in good fun, but we should never fear the food we eat. Did you know a lot of the food on our shelves is genetically modified? These modifications are linked to environmental and health problems. The European Union and over 60 developed countries have banned or regulated GMO foods.  But here in the United States the FDA has rejected consumer demands that GMO’s be labeled. How do we not have the right to know what is in our foods? Flat-out scary!

In your local grocer you may have noticed more tags this month on food shelves identifying Non-GMO foods as October is GMO awareness month. Forward thinking grocers are making efforts to support GMO-free brands and inform consumers even if the FDA do not.

We at Progressive Nectar believe all of us deserve the right to know what’s in our food year round and understand what we feed our families—we deserve an informed choice, it’s a fundamental right.  Here’s a bit of GMO information giving you a whole lot of power:

What is a GMO in the first place?
According to the Non-GMO Project, “GMOs, or “genetically modified organisms,” are plants or animals that have been genetically engineered with DNA from bacteria, viruses or other plants and animals. These experimental combinations of genes from different species cannot occur in nature or in traditional crossbreeding.

Virtually all commercial GMOs are engineered to withstand direct application of herbicide and/or to produce an insecticide. Despite biotech industry promises, none of the GMO traits currently on the market offer increased yield, drought tolerance, enhanced nutrition, or any other consumer benefit.
Meanwhile, a growing body of evidence connects GMOs with health problems, environmental damage

and violation of farmers’ and consumers’ rights.”

PUMPKIN SPICE TAPIOCA PUDDING RECIPE
INGREDIENTS
1 3/4 C water
1/3 cup Tapioca Pearls
2 ½ cups Coconut Milk (or other non-dairy milk)
1 pinch of sea salt
2 eggs separated
½ cup raw organic sugar
1 tsp pumpkin pie spice
1 tsp vanilla

***Pumpkin Garnish 10 dried apricots, 10 celery bits pieces, 10 toothpicks. Add Halloween sprinkles if you wish.

METHOD
Add water and tapioca pearls in a medium sauce-pan. Let tapioca pearls soak in water 30 minutes. Add coconut milk, sea salt, and egg yolks (lightly beaten). Stir over medium heat until it comes to a boil. Then reduce heat to a simmer for 10 minutes and stir every 2 minutes (or continuously) using a whisk.

While tapioca milk mixture is simmering, beat egg whites in electric mixer till you see stiff peaks. Add stiff egg whites into hot tapioca and fold till evenly combined over low heat. Stir for 3 to 5 minutes. Fold in vanilla. Scoop out pudding into serving dish or individual serving dishes and chill. When pudding is cold and fully set, serve & enjoy.

***Garnish with dried apricots and small pieced of celery on a toothpick for a pumpkin look. Add GF Halloween sprinkles if you’d like.
