Gluten-Free Monkey Bread is moist gluten-free banana bread with chocolate chips and nuts. You can add shredded zucchini too and it is awesome!  Delicious, sweet and quite the treat! This fuss-free recipe works every time and no fancy mixer needed—great for child participation. Just a fork or whisk will do the job. If you want it to be vegan and dairy-free, use recommended substitutes:  “vegan eggs”, raw coconut oil,  dairy-free chocolate chips  Enjoy this cake bread for dessert or breakfast!

 

Gluten-Free Monkey Bread
Ingredients
• 4 ripe bananas, smashed
• 1/3 cup melted butter or melted Raw Coconut oil
• 1/2 cup agave nectar
• 1 egg, beaten or vegan alt.
• 1 teaspoon vanilla
• 1 teaspoon baking soda
• Pinch of sea salt
• 1 cups of Brown Rice Flour
• ½ cup Almond flour

  • 1 cup chocolate chips
  • 3/4 cup raw walnuts
  • 1/2 cups shredded zucchini

 

Method

Preheat the oven to 375°F.

Mix butter or raw coconut oil, mashed bananas, agave nectar, egg, and vanilla, baking soda and salt in a large mixing bowl. Hand-stir with whisk. Add Brown Rice Flour and Almond flour into the bowl. Combine with other ingredients till evenly mixed. Add chocolate chip, walnuts and zucchini.

Line a 4×8 inch loaf pan with parchment paper. Pour batter into parchment paper lined loaf pan. Bake for 1 hour or until a knife inserted into center of load comes out clean.

Cool and remove from pan. Slice & serve. Enjoy!

Note: Makes one loaf.
