This Chicken Apple Sausage & Greens with Broccolini is the perfect meal in a bowl. It’s a quick ‘n easy dish that’s gluten-free, Paleo, dairy-free and whole 30 approved. This recipe is packed with protein, fresh flavors and sweet veggies. Enjoy cleansing cabbage, asparagus and yummy Broccolini as they pair well with chicken apple sausage and fresh ginger. What’s Broccolini? Great question! It’s a nice a cross between regular broccoli and Chinese broccoli. You’ll love its’ long sweet stem topped with a smaller floret. This fancy veggie is nutritionally charged with Vitamins A, C and K as well as Calcium and Iron. Dig in and eat up with this healthy meal!

Method
  1. Heat olive oil in a large soup pot over medium-high heat and add the sausage.
  2. Cook for 3-4 minutes. Add diced onions and ginger and turn the heat to high. Cook until the edges of the onions brown, about 3-4 minutes. Add the garlic and cook for another minute.
  3. Add cabbage, broccolini and asparagus to the pot. Stir and cover for 1 minute. Then add your chicken stock. Cover the pot again, lower the heat to medium low and cook for 2 to 5 minutes.
  4. Remove lid and cook on low for 5 minutes or until the veggies are done as you like them.
  5. Add sea salt and pepper if desired. Let rest for 5 minutes. Serve in bowls and enjoy!
