Method
  1. Line a baking pan with parchment paper.
  2. Zest your lime into a small bowl then cut the lime in quarters—set aside. Place 1/4 tbsp raw coconut oil under each cod fillet on parchment paper lined baking pan. Evenly place 1/4 tbsp raw coconut oil atop each cod fillet. Squeeze lime juice atop cod filets and generously sprinkle shredded coconut.
  3. Broil fish until just cooked through, depending on thickness, 6 inches from the heat, between 4 and 8 minutes. The coconut should be toasted and fish cooked through.
  4. Plate fish. Evenly sprinkle lime zest, sea salt, and fresh ground pepper atop. Serve with sautéed greens and garlic mashed cauliflower.
