Zest your lime into a small bowl then cut the lime in quarters—set aside. Place 1/4 tbsp raw coconut oil under each cod fillet on parchment paper lined baking pan. Evenly place 1/4 tbsp raw coconut oil atop each cod fillet. Squeeze lime juice atop cod filets and generously sprinkle shredded coconut.
Broil fish until just cooked through, depending on thickness, 6 inches from the heat, between 4 and 8 minutes. The coconut should be toasted and fish cooked through.
Plate fish. Evenly sprinkle lime zest, sea salt, and fresh ground pepper atop. Serve with sautéed greens and garlic mashed cauliflower.
