This fresh, Dairy-Free Blueberry Lemon Frosting is delicious paired with Gluten-free Wildflower Surprise Cake or could be used on any special diet cake/cupcake of choice. With lemon zest and colors of blueberry it’s simply delicious gourmet non-dairy frosting!
With an electric mixer, cream butter substitute and Non-dairy cream cheese together until smooth.
Mix in yogurt, blueberry water, 1/3 of the soaked blueberries, powder sugar and lemon zest till frosting forms.
Place in the refrigerator while the cakes are cooling.
How to Frosting the Wildflower Surprise Cake:
Removed cooled cakes from pans. Use a knife all around the outside of the cake to loosen it from the pan walls. Tap on all sides to loosen the cake. Place a plate on top of the cake and flip upside down to release from the cake pan. Do this for both cakes. Frost the bottom layer, place second layer on top. Frost the top layer. Frost the sides last. Decorate with the remaining 1/3 c. soaked blueberries.
This cake needs to be refrigerated due to the cream cheese frosting.
