Method
  1. In a stockpot, heat olive oil and sauté diced onion, leek, asparagus and potatoes over medium high heat till onions start to caramelize.
  2. Add broth and enough water to cover all ingredients with 1 inch of liquid—bring to a boil. Then reduce heat to a simmer and cook for 15 minutes. Remove soup from heat.
  3. Using an immersion blender, puree your soup till you reach an even smooth consistency. Add sea salt and pepper to taste. Serve and enjoy.
