These awesome Gluten-Free Lemon Chia Seed Pancakes are super cake-like, thanks to  Namaste Food’s Perfect Gluten-Free Flour Blend, and have a fresh lemon zing! Perfect for any weekend morning! If you don’t have Namaste‘s flour, substitute any GF flour blend.  If you want to get fancy, consider topping these pancakes with a mix of warm maple syrup and bourbon blend (over 21 only) or stacking these bad boys with lemon curd in between—Shazzam to breakfast greatness!

Method
  1. In one bowl add all dry ingredients (except chia seeds). Stir till combined. set aside.
  2. Using 2 small bowls, zest your lemon into one bowl and squeeze lemon juice into the other small bowl. Set aside.
  3. In a large mixing bowl combine eggs, almond milk, and vanilla extract. Whisk together.
  4. Gradually, add your dry ingredient blend as you are whisking.
  5. Once dry and wet ingredients are mixed together to a smooth batter fold in lemon juice, lemon zest and chia seeds.
  6. Time to make pancakes! Scoop batter onto sprayed preheated griddle or pan. Cook on one side till the shine disappears, then flip. Cook till done.
  7. Top with a squeeze of lemon juice and powdered sugar or pure maple syrup. Enjoy!
