Method
  1. Preheat oven to 400 degrees. Generously grease 12 muffin tins.
  2. In medium bowl combine all dry ingredients (except raisins and walnuts)—Set aside.
  3. Using an electric mixer combine all wet ingredients. Gradually mix-in dry ingredients to wet ingredients till evenly combined.
  4. Gently fold in walnuts and raisins.
  5. Scoop batter into greased muffin tins.
  6. Sprinkle roasted pumpkin seeds on top each muffin.
  7. Bake for 25 minutes.

*To check that your muffins are done, insert a toothpick in muffin center. The toothpick should come out clean when done.
