  1. Remove leaves from the beet root by chopping the stems & greens away from beet. Rinse leaves washing away any dirt.
  2. Chop beet greens and stems to 1/2 inch pieces—set aside.
  3. Wash beet root removing any excess dirt from skin.
  4. Place whole beets in small pot and fill with water just covering tops of beets with water.
  5. Over medium high heat bring water to a boil. Reduce heat allowing beets to simmer for 15 minutes.
  6. While beets are simmering, add olive oil and garlic to a medium frying pan over medium heat.
  7. Add beet greens to pan sauteing for 3-5 minutes just till greens turn richly green and slightly wilted. Add sea salt and pepper to taste. Set aside.
  8. When beets are done boiling, drain hot water from pot and fill pot with ice cold water. This makes it very easy to peel skin off beets.
  9. After freshly cooked beets have sat in cold water for 1 minute, use your finger-tips and gently rub the beet skin, it should easily come off the beet leaving you with a beautifully cooked beet that retained a ton of nutrients.
  10. Scoop sauteed beet greens into serving dish, slice beets and place them atop greens.
  11. Serve as main dish or as a healthy side. Enjoy!
