Method
  1. In a small bowl combine rice flour, sea salt, garlic powder, pepper and tarragon. Now place this rice flour-herb blend on a plate. Set aside.
  2. Heat a heavy pan over medium high heat.
  3. While your pan is heating-up, wash and dry Tilapia. Then squeeze fresh lemon juice on each side of the fillets. Lightly dredge fish in rice flour-herb blend and shake off excess.
  4. When pan is good and hot, add raw virgin coconut oil. As soon as oil melts, place fish in pan. Wiggle pan for the first 15 seconds keeping the Tilapia from sticking.
  5. Cook until golden crust forms on Tilapia (2-5 minutes). Carefully turn over fish (away from you avoiding splatters) and again wiggle pan for the first few seconds. Cook until Tilapia turns golden brown.
  6. Remove to a paper-towel lined plate (to soak up any additional oil).
  7. Then plate and serve.
