These Gluten-Free Pumpkin Scones are so flipping delicious! Not only do they taste good…but pumpkin provides a punch of fiber to kick-start your day! Best if served warm out of the oven on a plate with a dollop of your favorite topping, cream cheese, jam, butter, or non-dairy substitute.

Method
  1. Preheat oven to 400 degrees F
  2. Sift rice flour, oat flour, tapioca starch, potato starch, baking powder, salt, cinnamon and nutmeg together; set aside.
  3. In a separate bowl, combine eggs, pumpkin puree, almond dream water combo, and maple syrup. {I use an electric mixer with a paddle attachment.}
  4. Slowly add dry ingredients to the wet ingredients until well combined. Portion out with a large ice cream scoop and pat into a small patty shape and place on a parchment-lined baking sheet. Top with egg wash and bake for 17-25 min or until golden brown on the edges.
