Method
  1. In medium size bowl, mix together coconut milk, pumpkin, egg, oil, vanilla extract and maple syrup.
  2. Combine gluten-free flour, baking powder, baking soda, allspice, cinnamon and salt in a separate bowl. Stir dry ingredients into the pumpkin mixture and combine.
  3. Heat a lightly oiled griddle over medium high heat. Spoon batter onto the griddle, using approximately 1/4 cup for each pancake. Cook till edges are dull—you should not see a shine on the edges. Then flip and cook the other side for 2 minutes or until both sides are brown and cooked through.
  4. Serve with maple syrup, cinnamon swirled yogurt, and roasted pumpkin.
