This is one of the most amazing CLEAN breakfast recipes you can make— Sweet Roasted Cabbage and Poached Eggs. It is super simple, delicious, gluten-free and Paleo friendly. Great to serve-up for any brunch! Poaching an egg is easier then you think—vinegar will be your secret ingredient that makes it all come together. Roasting the cabbage brings forth it’s natural sweetness. Combining it with the rich protein and omegas of a free-range egg is beautiful! Feel free to serve with a side of bacon if you wish.

Method
  1. Preheat oven to 450 degrees F.
  2. Simply place sliced cabbage on large baking sheet with edges. Drizzle olive oil atop and toss cabbage to evenly disperse the oil. Add sea salt and pepper to taste. Place in oven. Roast for 40 minute or until cabbage is translucent—soft and sweet. We recommend turning the cabbage every 20 minuets for even roasting.
  3. 10 minutes before the cabbage is fully cooked it's time to poach eggs.
  4. Put 2 1/2 cups of water + 1 tbsp. vinegar in a sauce pan. Bring to a boil. Stir water vigorously with a spatula to form a water tornado, while stirring, crack an egg into the center of the water tornado. Stop swirling. Gently coax the egg white towards the center of the center of the yolk. Trust me the water will look cloudy, you will panic because it doesn't look right, but it will work out. If your egg sticks to the bottom of your pan, gently use your spatula to release it from the bottom. Cook your egg for about 3-4 minutes. Remove your egg from the pan with a slotted spoon. Place on a paper towel until ready to serve.
  5. Place roasted cabbage in a bowl and top with poached egg. Add sea salt and pepper to taste (optional). Serve and enjoy.
