Method
  1. Fill a large bowl with warm water. Dip one wrapper into the hot water for 1 second to soften. Lay wrapper flat. In a row across the center, place tofu, a handful of cabbage, basil, mint, cilantro and lettuce, leaving about 2 inches uncovered on each side. Fold uncovered sides inward, then tightly roll the wrapper, beginning at the end with the lettuce. Repeat with remaining ingredients.
  2. In a small bowl, mix the fish sauce, tamari, lime juice, garlic, honey/agave and chili sauce and your optional peanuts. If the sauce is too strong for you, add a bit of water for your liking.
  3. Serve rolled spring rolls whole or sliced with the sauce mixtures and enjoy!
